Mushrooms and Other Fungi

These are not technically vegetables but are used in the same way. Always make sure you know the type of mushrooms you are growing and cooking. The flavours of the different types vary considerably but they are all virtually interchangeable in recipes.

To fry mushrooms and other fungi

  1. Wipe clean and trim stalks.
  2. Peel only the large, flat varieties.
  3. Heat a little butter or oil in a frying pan and fry until golden and just tender.

To stew mushrooms or other fungi

  1. Prepare as for frying.
  2. Place in a saucepan with a little stock or water.
  3. Cover and bring to the boil. Reduce the heat and cook gently for about5 minutes until just tender. Season as required.
