Select bright green, unblemished beans that are firm and fresh. Avoid any that are wilted, discoloured or flabby.

String and slice in your usual way.

Blanch in boiling water for 2 minutes. Drain and plunge immediately into a bowl of iced water to cool. Drain well. Pack in usable quantities in polythene bags. Remove the air, seal, label and freeze. Storage time: 12 months.
