Select firm, fresh, bright green broccoli. Avoid any that feel flabby or have even the slightest hint of yellowing.
Separate into even-sized florets.
Blanch in boiling water for 2 minutes. Drain and plunge immediately in a bowl of iced water to cool. Drain. Pack in rigid containers to prevent damage. Remove the air, seal, label and freeze. Storage time: 12 months.
