Select small or medium-sized specimens. Extra-large ones tend to be woody.

Peel and cut into dice. Blanch in boiling water for 2 minutes. Plunge immediately in a bowl of iced water to cool. Drain and dry on kitchen paper.

Pack in convenient quantities in polythene bags or rigid containers. Storage time: 12 months.
