Sweetcorn

Young corn cobs freeze beautifully. It’s not worth taking the kernels off corn cobs to freeze when you can buy ready-prepared frozen corn kernels very reasonably.

Select cobs with an abundance of golden, swollen kernels. Avoid old cobs and those with withered ends or with any discoloured kernels.

Trim the stalks and remove the husks and the silks.

Blanch in boiling water for 5 minutes. Drain and plunge immediately in a bowl of iced water to cool. Drain and dry on kitchen paper. Pack in polythene bags. Remove the air, seal, label and freeze. Storage time: 12 months.
