Cauliflower or Broccoli Cheese

Serves 4

This traditional favourite is delicious served with crispy bacon and tomatoes.

1 cauliflower or large head of broccoli
600 ml/1 pt/2 ¼ cups cheese sauce
5 ml/1 tsp made English mustard
50 g/2 oz/1⁄2 cup Cheddar cheese, grated
25 g/1 oz/1⁄2 cup cornflakes, crushed
3 tomatoes, sliced

  1. Cut the cauliflower or broccoli into small florets. Cook in boiling, lightly salted water for 4–5 minutes until just tender.
  2. Drain and place in a flameproof serving dish.
  3. Stir the mustard into the sauce and spoon over the vegetables.
  4. Scatter the cheese and cornflakes over and arrange the sliced tomatoes round the edge.
  5. Place under a preheated grill (broiler) until the top is golden and bubbling. Alternatively, place in a preheated oven at 190°C/375°F/gas 5 for about 30 minutes.
