Serves 4
This traditional favourite is delicious served with crispy bacon and tomatoes.
1 cauliflower or large head of broccoli
600 ml/1 pt/2 ¼ cups cheese sauce
5 ml/1 tsp made English mustard
50 g/2 oz/1⁄2 cup Cheddar cheese, grated
25 g/1 oz/1⁄2 cup cornflakes, crushed
3 tomatoes, sliced
- Cut the cauliflower or broccoli into small florets. Cook in boiling, lightly salted water for 4–5 minutes until just tender.
- Drain and place in a flameproof serving dish.
- Stir the mustard into the sauce and spoon over the vegetables.
- Scatter the cheese and cornflakes over and arrange the sliced tomatoes round the edge.
- Place under a preheated grill (broiler) until the top is golden and bubbling. Alternatively, place in a preheated oven at 190°C/375°F/gas 5 for about 30 minutes.
