Serves 4–6
Try these with garlic mayonnaise as a starter, with a large mixed salad as a main course, or as an accompaniment to roast or breaded chicken.
100 g/4 oz/1 cup plain (all-purpose) flour
1 small onion, grated
1 egg
150 ml/1⁄4 pt/2⁄3 cup milk
350 g/12 oz/1 medium can of sweetcorn (corn), drained
Salt and freshly ground black pepper
45 ml/3 tbsp sunflower oil
- Sift the flour into a bowl. Add the onion.
- Make a well in the centre and add the egg. Gradually beat in the milk to form a thick batter. Stir in the corn and some salt and pepper.
- Heat the oil in a frying pan, add spoonfuls of the corn mixture and fry for about 2 minutes on each side until golden brown.
- Drain on kitchen paper (paper towels) and keep warm while cooking the remainder. Serve hot.
