Serves 4
Lettuce with peas is a classic Gallic combination.
1 onion, finely chopped
50 g/2 oz/1⁄4 cup butter or margarine
225 g/8 oz frozen peas
5 ml/1 tsp dried mint
Salt and freshly ground black pepper
1⁄2 small round lettuce, shredded
- Put the onion and butter or margarine in a saucepan. Cover and cook gently for 3 minutes, stirring once or twice.
- Add all the remaining ingredients, toss gently, cover and cook for about 8 minutes until tender, tossing from time to time. Serve hot.
