Sweet and Sour Cabbage

Serves 6

There are so many great cabbage recipes, it’s amazing that anyone would boil it to death any more!

450 g/1 lb red or white cabbage, shredded, discarding the stump
1 onion, thinly sliced
1 cooking (tart) apple, chopped
50 g/2 oz/1⁄2 cup raisins
30 ml/2 tbsp red or white wine vinegar
30 ml/2 tbsp water
30 ml/2 tbsp light brown sugar
Salt and freshly ground black pepper
25 g/1 oz/2 tbsp butter or margarine
30 ml/2 tbsp snipped fresh chives, to garnish

  1. Layer the cabbage, onion, apple and raisins in a casserole (Dutch oven).
  2. Mix all the remaining ingredients except the butter or margarine together and pour over. Dot with the butter or margarine.
  3. Cover and cook in a preheated oven at 160°C/325°F/gas 3 for 11⁄4 hours until tender. Stir well, then serve sprinkled with snipped
